Obviously everybody has their different tastes when it comes to white or dark meat. What is the real difference in taste?
The difference is dark meat is going to be juicier, white meat is going to be less calories and less fat. And do you know why it’s dark meat?
Why?
Because those birds that fly get more exercise in the chest, and that makes it dark. And we see chickens and turkeys that really don’t fly that don’t use their wings, it’s not going to be. And by the way, in talking about that, we talked before about antibiotics and hormones, also free range, and range free, a lot of issues about that. This whole idea of chickens being happy go lucky, and roaming, well according to federal regulations, all they have to do is allow access to the outside for the birds. That doesn’t mean the birds are ever leaving the cage or anything else. So you want to look for this certified humane seal, and we’re seeing more products like that than ever before. So if you are concerned about animals being raised humanely, look for that seal and read the labels carefully when it comes to poultry.
Phil Lempert, thank you very much. Tomorrow we’ll talk about tips for seafood.
