Sustainable foodservice pioneer Bon Appetit Management Co. charges ahead with animal welfare reforms

Sustainable foodservice pioneer Bon Appétit Management Company said starting Sept. 1 its 1.2-million-pound annual supply of ground beef and patties must come from suppliers that meet strict standards of one of four third-party, animal-welfare groups.

The Palo Alto, Calif.-based subsidiary of Compass Group USA is an on-site restaurant company offering full food-service management to corporations, universities, and specialty venues.
It operates more than 500 cafés for corporations, universities, museums and specialty venues in 32 states, including eBay, the University of Pennsylvania, and the Getty Center.
Bon Appétit announced in February that by 2015, 25 percent or more of its meat, poultry and egg purchases companywide will be sourced from producers that meet at least one of four certifications:
•    Animal Welfare Approved
•    Food Alliance
•    Humane Farm Animal Care
•    Global Animal Partnership certification
