Bolzano Artisan Meats, based in Milwaukee, WI, is proud of its status as the first company in Wisconsin to practice the art of dry curing, using traditional European methods. Owners Scott Buer & Christin Johnstone-Buer began making dried, fermented, and preserved meats at their home. As their “obsession” for meat processing took over, they turned their hobby into a business. The company quickly took off after its launch in 2009. By 2010, the salami had become popular enough to take over the company’s entire production. All seven types of salami made by Bolzano Artisan Meats are Certified Humane®.
